Chinese Thick Caramel & Ginger & Chamomile Tea Pork with Brown Fried Rice

Serves 2

Ingredients

Pork

400-500g pork fillet, halved
120ml ginger & chamomile tea
1 tbl spoon soy sauce
1.5 tbl spoon thick chinese caramel sauce
1 clove garlic, crushed
1 tsp sesame oil

Method
Preheat over to 180c
Mix tea, soy, caramel, garlic & sesame oil in a boil. put 2-3 tbl spoon aside for the rice
Place pork in small (ceramic) baking tray
add the liquid, covering the pork with it. If it does not fully cover, rotate the pork halfway through cooking. This ensures the evenness of the colour.
Cover with foil, bake 20 min or until cooked and tender

Fried Rice

1 cup brown rice
1/2 cup beef stock
water for cooking rice
1/4 small capsicum, diced small
1/2 carrot, diced small
2 -3 cherry tomato, quartered
1 egg
3 sml mushroom, quartered
1/2 sml brown onion, sliced
2-3 tbl spoon of Sauce from pork
1 heaped teaspoon minced galangal
1/2 cup frozen peas & corn
1 -2 tsp sesame oil
salt & pepper to taste
Coriander to dress.

For time management start cooking the brown rice before the pork.

Cook rice with beef stock and water, put aside to cool.
heat sesame oil in a med pan & add galangal, onion, salt & pepper
add vegetables and 1 tbl spoon of the liquid
when almost cooked add the rice & 1 tbl spoon of liquid, mix through
add the egg and mix until cooked

Slice pork and serve on rice with chopped coriander for taste & garnish
